Questions You Asked

Question: Are those little decorative silver balls that are put on cupcakes and other things safe?

Answer: The FDA has a fact sheet on Dragees (their actual name) stating that "We have no evidence of harm to health from the extremely small quantity of silver in the coating. Therefore, the FDA has not objected to the presence of silver on these decorations when they are used as a cake decoration."

Question: Is the Ball Blue Book still a reliable source?

Answer: Yes, and so is the Kerr book. Ball and Kerr both use scientifically reliable, USDA endorsed practices in their recipes. Incidently, Alltrista Corporation, which produces Ball home canning products, has acquired "certain production assets and inventory" from Kerr Group, Inc.
